A pine nut with a Himalayan identity
Chilgoza is the edible seed of Pinus gerardiana. Himachal Pradesh biodiversity literature describes the species as native to Asia and restricted to parts of the north-western Himalayas, including Kinnaur and Pangi. This limited geography contributes to its distinctive market identity.
The in-shell seed is elongated and brown. Once cracked, the pale kernel has a rich, gently resinous, nutty taste.

Handling and storage
